Ingredients:

1/2 cup (140g/4 1/2oz) unsweetened apple puree
1/4 cup (60ml/2fl oz) low-fat vanilla custard
3 tablespoons reduced-fat margarine
1 tablespoon brown sugar*
1/2 teaspoon ground cinnamon
1 teaspoon vanilla essence
1 egg, lightly beaten
1/2 cup (80g/2 2/3oz) stone-ground self-raising flour
1/4 cup (30g/1oz) almond meal
1 tablespoon reduced-fat milk

Method:

1 Preheat oven to 170°C (325°F/Gas 3). Lightly grease 4 x 1/2 cup (125 ml/4 fl oz) capacity ramekins.
2 Spoon 11/2 tablespoons of the apple puree into the base of each ramekin and top with the custard.
3 Beat the margarine, brown sugar and cinnamon until creamy. Add the vanilla and egg and beat until combined. Fold in the flour, almond meal and milk and mix well.
4 Spoon the batter into the ramekins and bake for 20-25 minutes or until a skewer comes out clean when inserted into the centre. Serve with low-fat custard and fresh apple slices. Serves 4
