Ingredients:

2 teaspoons olive oil
1 medium onion, chopped
1 tablespoon grated fresh ginger
4 medium carrots, chopped
2 tablespoons water
500 g (1 lb) peeled Jap pumpkin, chopped
4 cups (1 litre/32 fl oz) reduced-salt chicken stock
2 cloves garlic, sliced
1 cinnamon stick (std)
2 star anise

Method:

1 Heat the oil in a large pan over medium heat.
Add the onion and cook for 5 minutes or until
golden..
2 Add the ginger, carrots and water and cook for
5 minutes or until the carrots are soft.
3 Add the pumpkin, chicken stock, garlic,
cinnamon stick and star anise. Bring to the boil,
then reduce the heat and simmer for 40 minutes
or until the pumpkin is soft.
4 Discard the cinnamon stick and star anise.
Puree the soup until smooth. Serves 4
