Ingredients:

450 g (15 oz) gluten-free bread mix
1/4 cup (40 g/1 1/3 oz) lightly packed brown sugar
1/4 cup (60 ml/2 fl oz) olive oil
1 egg, lightly beaten
1 2/3 cups (420 ml/14 fl oz) water
1 1/2 teaspoons mixed spice
1 cup (120 g/4 oz) sultanas or other chopped dried fruit
1 tablespoon caster sugar

* To lower the GI of the buns, use dried apricots, dried pear, dried peach, dried apple, dried fruit medley or prunes instead of sultanas. Using a bread mix that contains a higher proportion of soy flour and less glucose will also help lower the GI.

Method:

1 Preheat oven to 210 degrees C (415 degrees F/Gas 6-7). Line 16 x 1/2 cup (125 ml/4 fl oz) capacity muffin holes with muffin cases. Spray the muffin cases with canola oil spray.
2 Put the bread mix, brown sugar, olive oil, egg, 360 ml (12 fl oz) of water and 1 teaspoon of the mixed spice into a large bowl. Mix with an electric mixer on low-medium speed for 4-5 minutes or until smooth. Stir in the sultanas.
3 Divide the mixture among the muffin cases. Set aside for 10 minutes. Then bake for 10-12 minutes or until light golden brown.
4 Meanwhile, put the remaining water, remaining mixed spice and caster sugar into a pan. Cook over medium heat, stirring constantly, for 2-3 minutes or until the sugar has dissolved.
5 Brush the glaze over the hot fruit buns as soon as they are removed from the oven. Set aside for 5 minutes before transferring to a wire rack to cool. Serve warm with butter. The buns can be frozen and thawed in the microwave.
