Angel Hair Pasta with Ham & Lentils

Ingredients:

2 teaspoons olive oil
1 medium onion, thinly sliced
2 cloves garlic, grated
100g (3 1/3oz) sliced 97% fat-free ham
200g (6 1/2oz) brown lentils
400g (13oz) can chopped tomatoes
5 cups (1.25 litres/40fl oz) water
1 teaspoon chilli flakes
200g (6 1/2oz) angel hair pasta, broken into 4cm (1 1/2in) pieces
2 tablespoons chopped fresh flat-leaf parsley

Method:

1 Heat the oil in a large pan, add the onion, garlic and ham and cook over medium heat for 5 minutes or until the onion is golden and the ham is brown.
2 Add the lentils, tomatoes and water and bring to the boil. Reduce the heat and simmer for 25 minutes or until the lentils are soft.
3 Add the chilli and pasta and cook for 3 minutes, stirring occasionally until the pasta is al dente (cooked, but still with a bite to it). Stir through the parsley and serve. Serves 6.
